Ingredients
- 4 cups chicken or vegetable broth
- 3 cloves garlic, thinly sliced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon soy sauce (or tamari)
- 1 teaspoon sesame oil
- 1-2 teaspoons chili garlic sauce or Sriracha (to your spice preference)
- 2 bundles of dried ramen noodles (or any quick-cooking noodle)
- 1 head of bok choy, sliced
- 1 cup sliced mushrooms
- For Garnish:
- 1 soft-boiled egg
- Sliced green onions
- A drizzle of chili oil
Instructions
- In a medium pot, combine the broth, sliced garlic, grated ginger, soy sauce, sesame oil, and chili garlic sauce.
- Bring the broth to a rolling simmer over medium-high heat and let it cook for 5 minutes for the flavors to infuse.
- Add the dried ramen noodles, sliced bok choy, and mushrooms to the simmering broth.
- Cook for 3-5 minutes (or according to your noodle package directions), until the noodles are tender and the vegetables are cooked.
- Ladle the hot soup, noodles, and veggies into a deep bowl.
- Garnish with a soft-boiled egg (cut in half), a sprinkle of green onions, and an extra drizzle of chili oil if you like it spicy.
Tips
For a perfect 6-minute soft-boiled egg: Bring a small pot of water to a boil, gently lower in an egg, and set a timer for exactly 6 minutes and 30 seconds. When the timer goes off, immediately move the egg to a bowl of ice water to stop the cooking.
