Introduction
When the weather heats up, or when I just need a late-night snack that won’t derail my health goals, this Greek Yogurt Bark is my savior. It’s like eating frozen yogurt, but in a fun, breakable “candy bar” form. It’s incredibly refreshing, keeps in the freezer for weeks, and is so fun to customize with whatever fruit or nuts you have in the pantry.
Why You’ll Love This Recipe
- High-Protein Snack: Greek yogurt provides a massive protein boost to keep you full.
- Zero Cooking: No oven, no stove—just mix, spread, and freeze.
- Kid-Friendly: A healthy alternative to ice cream that kids love to help make.
- Visually Stunning: The colorful berries against the white yogurt look beautiful.
- Meal Prep Friendly: Make a big batch and keep it in the freezer for grab-and-go snacking.
Ingredients
- 2 cups plain Greek yogurt (full-fat works best for creaminess)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Toppings:
- 1/2 cup strawberries, sliced
- 1/4 cup blueberries
- 2 tablespoons chopped pistachios or almonds
- 2 tablespoons mini dark chocolate chips
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth and well-combined.
- Pour the yogurt mixture onto the prepared baking sheet.
- Use a spatula to spread the yogurt into an even layer, about 1/4 to 1/2 inch thick.
- Immediately sprinkle your strawberries, blueberries, nuts, and chocolate chips over the top. Press them gently into the yogurt so they stick.
- Place the baking sheet flat in the freezer for at least 3-4 hours, or until the yogurt is completely frozen solid.
- Remove from the freezer and use your hands to snap the bark into jagged pieces (shards).
- Eat immediately or store the pieces in a freezer-safe bag for later.
Tips
Don’t use non-fat yogurt if you can avoid it; the higher water content makes the bark icy. Full-fat (5%) Greek yogurt results in a creamier bite that isn’t rock hard.
