Introduction
After the heavy eating of the holidays, your body often craves a meal that feels “clean” but still satisfies that deep winter need for warmth. This One-Pot Chicken Tortilla Soup is my go-to “Reset Recipe.” It’s a vibrant, colorful, and slightly spicy stew that is packed with lean protein and fiber-rich beans. It turns your kitchen into a high-end Mexican cantina in less than 30 minutes.
The magic of this soup is in the toppings. The base is healthy and lean, but when you add a squeeze of lime, some creamy avocado, and those signature crunchy tortilla strips, it turns into a gourmet experience. It’s a 30-minute meal that tastes like it simmered all day, making it perfect for your busy work weeks.
The “Secret” Ingredients for Deep Flavor
The secret to a “Rich” broth without the fat is Tomato Paste and Fire-Roasted Tomatoes. Most people just use plain diced tomatoes, but fire-roasted ones add a smokey, charred depth. Sautéing the tomato paste with your spices before adding the broth creates a thick, savory base that gives the soup a “velvety” body rather than a thin, watery one.
Ingredients
- 1 lb Shredded Chicken: Rotisserie chicken is a perfect time-saving hack.
- 1 can Black Beans & 1 can Sweet Corn: Drained and rinsed.
- 1 can Fire-Roasted Diced Tomatoes.
- 4 cups Chicken Broth.
- 1 Onion, 1 Bell Pepper, & 2 cloves Garlic: Diced.
- The Spice Mix: 1 tbsp Chili Powder, 1 tsp Cumin, 1/2 tsp Oregano.
- Toppings: Fresh avocado, lime wedges, cilantro, and tortilla strips.
Instructions
- Sauté: Cook the onion and bell pepper in 1 tbsp oil until soft. Add the garlic and spices; stir for 1 minute.
- The Base: Stir in the tomato paste and cook for 1 minute. Add fire-roasted tomatoes, beans, corn, and chicken broth.
- Simmer: Bring to a boil, then reduce heat and simmer for 15–20 minutes.
- Finish: Stir in the shredded chicken and a squeeze of fresh lime juice.
- Serve: Ladle into deep bowls and pile high with your favorite fresh toppings.
Storage & Reheating
Store in an airtight container for up to 4 days. If the soup gets too thick in the fridge, add a splash of water or broth before reheating on the stove.
